Christmas Gingerbread Cookies
Enjoy spicy gingerbread Christmas cookies with your hot chocolate, a great way to spread the Christmas cheer and create memories with friends and family.
This simple recipe was gifted to by Karen, a great customer and friend of of Oven Loving.

Here is what you need to get going.

This is what you need to do.
Making the Dough
Mix together the butter, brown sugar and golden syrup in a large bowl until light and fluffy.
Gradually add the eggs and incorporate then will till thoroughly combines.
Sift the various dry ingredients – flour, ginger, cinnamon, baking powder- into the wet mixture. Karen’s suggests adding the spices first then add the flour.
Mix well until smooth, making sure there are no lumps of flour in the batter.
Knead the dough until it is smooth, then roll it our to a thin 5mm sheet. Refrigerate for 15 mins.
Now comes the fun part – using a cookie cutter to shape your dough, whatever you choose. Karen did mini houses.
Baking the Christmas Cookies
Bake for 8 min or until lightly browned at 180. Leaved to completely cool before icing.
Making the icing
Beat the egg whites until they become foamy
Gradually add the lemon and icing sugar, making sure you incorporate them well into the egg whites.
Beat until the mixture is thick and creamy. Add a few drops of min extract.
Divide the mixture into bowls and tint each one with whatever Christmas colour you like.
Pipe onto cookies, bring the cookies to life.
Make sure the icing is completely dry before you store the cookies.
